A Message from 2011 Guest Chef Ross Lewis
"It was with great pleasure that I accepted the invitation to be a part of the fantastic Seafood festival on Achill last year. The community and the organisational committee really come together to insure that the festival is truly a celebration of seafood at its best and to make sure that all of those who came got a true flavour of all of the great amenities that Achill has to offer. I would highly recommend the festival, there would be very few better ways to see the beautiful west of Ireland island of Achill."
Ross was executive chef for the state banquet at Dublin Castle for the Queen of England and guests, held on Wednesday 18th May 2011.
Ross is from Cork and a graduate of University College Cork. He has travelled and worked in the restaurant industry in New York, London and Switzerland. His passion and drive to open his own restaurant brought him back to Ireland where he has become immersed in Ireland's emerging food culture.
Ross was Commissioner General for Eurotoques Ireland from 2001 – 2004 and is currently one of it's commissioners. He also sits as a member of the Taste Council of Ireland. Both organizations are dedicated to promoting the use of organic and artisan locally produced ingredients and Ross' dedication to this is evident in the menus he creates at Chapter One.
Since it's opening Chapter One and it's team have been the recipients of numerous awards for both service and food:
Chapter One has also been internationally feted by top U.S food magazine's former food editor as his favourite Dublin restaurant and by Australian Gourmet Traveller as having "a reputation for serving the very best of Irish inspired cuisine".
